Need the perfect snack for an afternoon pick-me-up? How about a wholesome breakfast to get you going? I got you. These ‘Matcha Oat Energy Balls’ are the highest quality, plant-based ingredients. They come together in a delightful little bite-sized ball. By combining oat flour with some bright green matcha, gooey dates, cashew butter, a drizzle of tahini, a squeeze of lemon juice, and fresh vanilla seeds- you are ultimately left with a scrumptious mixture that is downright delicious.
About Matcha
If you’ve never had matcha before, this would be a good place to start. From young tea leaves made into a powder, this potent tea is full of flavor. It offers a good amount of caffeine (that some people prefer to coffee!). I can definitely attest to the mental alertness that occurs after having one serving. I just love it. On its own, matcha can be quite bitter. In this case, oat flour and gooey dates makes the bitterness go away. At this time, you are left with a nutty earthy flavor.
For added richness, I like to throw in some extra-virgin, unrefined coconut oil that has a gorgeous coconutty flavor. It also helps to set the balls in the fridge. This makes it so they have a nice, firm texture when taking a bite. For more flavor, I add some vanilla bean seeds straight out of the pod. If you can’t find fresh vanilla beans, you can certainly use vanilla extract. Adding just a touch of lemon juice and a pinch of salt to the mix, these energy balls have a well-rounded flavor with perfect sweetness. I just ate 2 for an afternoon snack as I write this very blog post!

6 gooey dates* 1. Combine all ingredients in a food processor and blend on high speed until thoroughly mixed. Scrape down the sides with a spatula, as needed. Once combined, transfer to a large plate and start to roll the balls. Each ball should be around 2 tablespoons. Once rounded, place the balls in a large, shallow bowl to add the coating. 2. Using a small mesh strainer, add 1 tablespoon oat flour and 1 teaspoon of matcha. Gently mix with a spoon and place over the balls. Tap with the spoon and dust the balls with the coating. Using your hands, move and shake the plate in a circular motion to coat the balls evenly. Using your hands, pick up one ball at a time and roll into a ball shape, pressing in the coating until shiny. 3. Transfer to an air tight container and place in the fridge for at least 2 hours. Enjoy cold! If your dates are not gooey, you will need to soak them in boiling water for a few minutes. But honestly, if they are not gooey that means they are probably old and dried out. In that case I'd really recommend finding some fresher dates, you know what I mean?

1 cup oat flour, plus 1 tablespoon for coating
1 teaspoon culinary grade matcha, plus 1 more teaspoon for coating
1 vanilla bean pod, scraped or ½ teaspoon vanilla extract
1 tablespoon tahini
1 teaspoon lemon juice
1 tablespoon maple syrup
2 teaspoons extra-virgin, unrefined coconut oil
½ cup cashew butter
A pinch of salt Instructions

If you have a high-speed blender, you can make your own oat flour by blending rolled oats. Store in a tightly sealed container.
I find that these energy balls taste best when they are thoroughly chilled and even better the next day!
These will store for up to 5 days in the fridge.
