Zuppa Toscana is a classic Italian soup made with potatoes, kale, and sausage. Indeed, it is some serious comfort in a bowl and my version is one of the most popular recipes on the blog to date!

These Roasted Carrots are bright and refreshing, while also offering a nice crunch from toasted pumpkin seeds. Consequently, this is a great dish for any holiday table as it works nicely as a vegetable side or a salad. Also, I think this is a great way to contrast all of the heavy comfort foods during the holidays.

Crispy, chewy, and deeply flavorful- these cookies are incredibly rich and oh so chocolatey with large chunks of flaky salt that melt onto your tongue. The dough can be made in advance and actually should be for the best results.

With a few additional steps, you can transform a simple recipe such as roasted potatoes into a decadent and over-the-top delicious side that will seriously impress. Undoubtedly one of my favorite dishes to offer guests.

One of the earliest recipes on the blog, these green beans are tossed with a mix of vibrant spices including red pepper flakes, curry powder, coriander, cumin, and chili powder for a fiery kick. Because of this, they earned the nickname ‘Firecracker Green Beans’!

After years of testing, I have finally perfected this foundation of layers that creates an incredibly hearty, wholesome, and comforting lasagna that will impress anyone you make it for. It’s a labor of love but it feeds a crowd and it’s oh so worth it.

Pumpkin Gingerbread Granola– one of my best vegan holiday recipes if you ask me! Clusters of toasty, nutty oats and puffed rice are tossed with warming spices like ginger, nutmeg, clove, and cinnamon. Coated with coconut oil and a touch of olive oil for maximum richness, this granola is totally irresistible. Lastly, it makes for a lovely gift!

This Easy Baked Rice has without a doubt become the ONLY way I cook rice. After only 25-35 minutes (depending on the variety), you will have perfect, fluffy baked rice every damn time. So.. you’re welcome!
13. Incredible Gluten Free Dinner Rolls
Welcome to the most Incredible Gluten Free Dinner Rolls! The recipe uses only a handful of pantry-friendly ingredients (soaked rice being the main one) and just requires a blender and a non-stick muffin pan to make. The results are the most delectable, golden and crispy on the outside and soft and fluffy on the inside, gluten free dinner rolls.
14. Twice Baked Potatoes
Crispy potato skins filled with fluffy and creamy mashed potatoes that are loaded with lots of fresh pepper, shredded vegan cheese, and tangy coconut yogurt and topped with crispy shiitake bacon…what could be better? Obviously not many things!
15. Mushroom Gravy
Next in this roundup of vegan holiday recipes is my Mushroom Gravy and it’s a heavy-hitter. Perfect for the holidays or any situation needing gravy. Whether it be fluffy rice, roasted or mashed potatoes, or to go alongside a Thanksgiving feast, this recipe comes together fairly easy with minimal chopping and it’s all done in one large skillet. Undeniably delicious!
16. Pumpkin Spice Rice Krispie Treats
These Pumpkin Spice Rice Krispie Treats are to die for. They are based off of my original recipe but this go round, I’ve added some extra butter, some beautiful warming spices, and added a cinnamon brown sugar & flaky salt topping to make them out of this world delicious.

This Garlic Roasted Eggplant is super fun and easy to make. Once roasted, the final eggplant is creamy, soft, and luxurious. Surely a fantastic side to any table.

If you are looking for an interesting and exciting new vegetable side to try this year, you have come to the right place! This Roasted Delicata Squash with a pecan & meyer lemon dressing is absolutely divine. So festive and colorful, this is the perfect side dish for any table.
19. One-Pot Hamburger Helper
This one-pot meal comes together quite easily and feeds a crowd. Because it’s hearty and comforting, everyone always wants seconds. Basically, you can’t go wrong with this one!
20. Creole Chex Mix
This here is another recipe that I am famous for. Make a batch, jar it up, and gift it to your family and friends. And always keep a jar or two for yourself!

One of my most famous recipes ever. It is a labor of love but the results are incredible. Also, it’s perfect for feeding a crowd!

Obviously, you’ll need an impressive dessert for the holidays. Well, this cheesecake might just be that! It’s decadent and totally luxurious while also not being too sweet (which I hate about most desserts). Indeed, it is quite the task to make so please be patient!
24. Baked Feta with Pepper Jelly
Surprisingly easy, this classic holiday appetizer is to die for. Melted vegan cheese wrapped in crispy dough with sweet jelly and zippy mustard.. are you kidding me? Certainly, you must make this over-the-top starter to share with friends and family.
25. Red Beans and Rice
Albeit a labor of love, this dish is totally worth it! Firstly, this recipe requires some planning. Secondly, it also needs a tremendous amount of time to slowly cook the beans. But the end result is a big pot of thick, creamy, savory, and delicious red beans with a such complex flavor, I promise that you will be blown away. Of course, read the reviews to confirm!
26. Crispy Crawtators
These potatoes work as a wonderful side to any meal and they are fun to make. Boil, smash, and bake until crispy!
27. Easy Vegan Quiche
Here we have a quiche recipe perfectly designed for 2 store-bought crusts (because I know you are not making them from scratch). Certainly, these are an ideal breakfast during the holidays and you can easily play with the flavor combinations.
28. Dirty Rice
Deeply seasoned and bursting with flavor, this Dirty Rice transports me back to my childhood. Furthermore, it makes for a fantastic holiday side!

Since the holidays can be a busy time, I love to have my back pocket recipes that come together quickly and easily. This one is done in one pot and is super delicious and hearty. Simply throw everything into a pot, cover, and bake. You really can’t get easier than that!

Lastly, I wanted to offer something to ring in the new year! This recipe is hearty, wholesome, and chock full of good luck.
